Q: How does your wireless device know which one of these to connect to?

You have to understand that this is above consumer grade equipment. This utilized the UniFi controller, and works under the WiFi roaming concept. Think of it like your cellular phone, when you travel from point A to point B over any long distance, you clearly move from one Cell tower to another, seamlessly. This is the same concept, and is part of the WiFi standards. UniFi devices are managed by a single controller, therefore you only create 1 set of settings, not one for each access point. The controller then passes those settings down to each access point that has been adopted in to the network, so they have the same SSIDs. The 802.11 accounts for moving from one access point to another using the roaming standards.

Q: If I buy more than one do I just need one connected to the wired network, if not will leaving one unwired degrade performance?

These are not repeaters, so no, it will not downgrade performance to have one non-wired. This is why using MESH networking is good.

There are probably many ways to do this. The one I used uses a Ubiquiti NanoStation locoM2 and a Ubiquiti airGateway. The NanoStation receives the parks' WiFi and the airGateway re-broadcasts it within the RV where all your devices can connect to it privately. Search for a blog titled "Private RV Wi-Fi and Making a Better Park Connection for Under $100" for detailed configuration instructions. Works perfectly!

I don't know what you are trying to do but this AP comes with a Power over Ethernet injector. You run a cat5 from your switch/router to the injector, which has a standard 3 prong plug that you plug into an outlet, and then run a cat5 from the output to the AP. That is the only safe and effective way to do this
