Q: What is the wiring required to keep my chest freezer at 70 F?

This device doesn't require any additional wiring, the big plug is where the relay resides to turn the freezer on and off. Basically you plug the controller in the wall, and the freezer into that plug. You then run the copper thermocouple into your freezer and set the dial. You will want to leave a thermometer that you trust in the freezer to verify the temperature because the controller may be a little off. Hope this helps.

Q: Do you sell just the gas filled probe on a 6-foot capillary tube? I think the tip may have been damaged and is functioning incorrectly.

We don't sell individual pieces but it is possible that the item may be covered under a warranty. Contact the seller and have them contact the manufacturer on your behalf.

Q: I fried my second freezer using this thermostat, could it has something to do with me moving the dial while the freezer is turned on (Haier freezer)?

If you use this on a freezer, always set the freezer to its coldest temperature setting. The set the A19AAT-2C to the desired set point. If you dont set the freezer to its lowest setting, it will "short cycle" the compressor and prematurely burn out the compressor windings with the constant on/off. It may have been partly due to the fact it was a Haier freezer, its China made, inferior product in my opinion.

Q: Can I use this to control the freezer while still letting the refrig at normal 35-40 degrees?

Probably not, but I might be mistaken. This works as a power cut off and since most refrigerators/freezers only have one outlet, you probably can't control both via this unit.
